Harvest Stuffing



Not being much of a traditionalist, I served Indian food for Thanksgiving.
Maybe that is why I have a hankering for stuffing in the spring.
In my book, there is only one way to make stuffing. It must have fruit.
My mother made stuffing in this manner, and so do I.
This stuffing is great hot or cold, with a big glob of cranberry sauce.
Plus, you end up with a jar of wheat germ, which is yummy sprinkled on yogurt.

Harvest Stuffing

     1 c. shredded carrot
1 c. chopped celery
1/2 c. chopped onion
1/2 c. butter
1 tsp. ground sage
1/4 tsp. ground cinnamon
1/8 teaspoon pepper
8 c. dry bread cubes (I use bagged)
2 c. finely chopped and peeled apple
1/2 c. chopped walnuts
1/4 c. wheat germ
1/2 to 3/4 c. chicken or vegetable broth

In a skillet, cook carrot, celery and onion in butter until tender but not brown.
Stir in sage, cinnamon and pepper. In a large mixing bowl, combine bread cubes, apple, walnuts and wheat germ.
Add cooked vegetable mixture.
Drizzle with enough chicken broth to moisten, tossing lightly.
Use to stuff one 10 pound turkey, or bake in a casserole, which is what I do.
Makes 10 servings.

  1. I am considered weird in our family Lisa because while I am not a big fan of meat, I would easily trade anyone my chicken or turkey for their potatoes or stuffing. I have been known after Christmas to have stuffing and mayonnaise sandwiches for days for lunch. There are many other reasons too why they consider me strange, as you are well aware, but this one is a biggie!!

    Loving the new header too!! Very retro-chic girl!!

  2. This sounds really tasty, plus it has lots of stuff that could make it considered "healthy."
    We are traditionalists at holidays because we have big family dinners w/ the extended family. Whenever I suggest something different, everyone fusses until I make traditional dishes.
    Someday I will surprise them and pop in some new dishes!
    I like the new header also.
