Cake Mix Bars

SH's office mates often bring in food, so he asked me to bake. Last week I sent in brownies. Yesterday I decided to try making cookie bars using an orange cake mix. I deemed them yummy, so this morning I layered them with wax paper, and packed them with an ice pack, so they would arrive intact. SH had a few stops to make before the commute into the city, and the car's interior tends to get a tad hot. I would eat melted, mushy baked goods, but I do draw the line in serving them to others.

Cake Mix Bars


  • 1 Box Cake mix (I used orange)
  • 1 Egg
  • 1/2 cup Oil (I used extra light olive oil)
  • 1/4 cup Water
  • 6 oz Chocolate chips (I used butterscotch)
Directions

  1. Mix cake mix, egg, oil and water in a bowl until almost all the lumps are gone.
  2. Add the chocolate chips.
  3. Bake in a greased 9 X 13 pan at 350 degrees for 20-25 minutes.
  4. Cool and cut into squares.

Before sending to your husband's office, taste to be sure they pass the test of baking with a cake mix. Whatever that means.

  1. I likes it a lot! I wants to bake that orange bar again. When you put it in your mouth, it became more sweet than you think that is sweet.
    Remember once time that we made chocolate cookies from cake mix? I think 2 years ago. It is good.

    I bet SH is very popular with his office mates now! Those Brownies look delicious. Brownies are Jessica's favorite but we have never had orange and butterscotch flavored ones. They sound sooooo yummy.

  5. I think you should make some more of the chocolate cookies from cake mix for your daughter.: ) You could also send whatever sweets you want to bake my way and I will help you eat them. I am okay with mushy.

  6. Those look great! I just made some chocolate cookies from cake mix and cream cheese this week, found them on Paula Deen's website. I'm not a huge fan of her show but the woman knows her food. They were gone in 2 days. Even my youngest daughter, who does not care for cake at all and hates cream cheese, could not stop eating them. Will have to try the bars.

  7. These look so yummy, yup I agree you must always test before they leave the house. But the only thing wrong with this is it then doesn't make it out of the kitchen since I can't stop "testing".
