Chewy Corn Flake Cookies

After these cookies were baked, I wasn't sure if I liked them. I kept trying just one more to be sure.  After downing a good half a dozen, I decided they were worthy of adding to my recipe box.  They are very chewy, and go well with milk. For a crunchier Corn Flake cookie, try the classic recipe, which was also taste tested very thoroughly by me.

Chewy Corn Flake Cookies

1/4 c. butter
1/2 c. sugar
1/2 c. brown sugar
1 egg
1 cup  coconut
5 cups Corn Flakes

Preheat oven to 350 degrees
Melt the butter in a sauce pan. Remove and stir in sugars. Add egg. Stir in coconut and corn flakes. Drop by tablespoon onto parchment paper lined cookie sheet, and bake for 10 minutes until golden brown.
