Peanut Butter Cookies

 Cookie Battle

While I am a big fan of chocolate, I was not rooting for the brownie who was trying to over take the peanut butter cookie, as they battled it out on the serving platter. The peanuty taste shines through in this recipe, so while that brownie was enjoying a feeling of superiority as it mounted Mr. Peanut, he was left on the dish. In the corner, the s'mores bar tried to move up a bit, but was unsuccessful. More on his fate will follow.

Peanut Butter Cookies 
made with Natural Peanut Butter
  • 1/2 cup butter, room temperature
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup peanut butter (I used Smucker's Natural Crunchy)
  • 1 egg
  • 1 1/4 cup flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
Cream the butter, and sugars. Mix in the peanut butter and egg.
Mix the dry ingredients into the sugar butter mixture.
Cover the dough, and refrigerate for at least 3 hours.
Preheat oven to 375°F.
Shape dough into 1 1/4 inch balls. Place 3 inches apart on ungreased cookie sheet.
Flatten in a crisscross pattern with a fork.
Bake 9-10 minutes. Cool on baking sheets for a minute, and then cool completely on a rack.

  Yield: 2 dozen cookies.
