Chocolate Coconut Cheese Cupcakes

These cupcakes, which I last served in April, are too perfect in their gooey goodness, i.e., I don't want the temptation in the house, but I look forward to an excuse to bake them again.


Chocolate Coconut Cheese Cupcakes

• 1 box of Devils Food Cake Mix
• 8 ounces cream cheese, softened
• 1/3 cup of granulated sugar
• 1 egg
• 1 cup of semi-sweet mini chocolate chips
     -chocolate frosting of your choice-

Preheat oven to 350.
Prepare cake mix according to directions on
package.
Mix together cream cheese, sugar, egg,
Fold in chocolate chips.
Fill cupcake tins (w/liners) half full of cake mixture and
drop in 1 teaspoon of cheese mixture into each
cupcake.
Bake according to package directions.
Frost with chocolate frosting. Decorate with coconut and mini chips.
